The week that was March 14th, 2022


It was a post birthday trip to the mountains and being solo due to a 3 day work trip kind of week. There were only three dinners on our grocery list which did leave me a bit of wiggle room to get some fun ingredients for myself that are on the banned list (namely artichokes, which I love).

But first, here's a picture of our pups who were able to come to our cabin get away! There was a wind/snow storm that gave us some anxiety and limited our time outside and around town, but it was so nice to get away!

Cass & Ziggy

The puff pastry pizza that has now become a staple in our cooking rotation. This rendition was zucchini, prosciutto, goat cheese. If you still haven't tried this super easy and versatile dinner what are you waiting for!?

YUM. It's hard to find a fault with this dish. Gnocchi is obviously the best comfort food and the addition of the charred, crispy brussels and nutty, salty browned butter? No complaints. Not one.

I honestly only know that paprikash is a thing because of 'When Harry met Sally'... am I the only one? Waiter, there is too much pepper on my paprikash. Fortunately this variation was not too peppery. Make sure to have plenty of paprika handy! I almost didn't have enough. I liked that this was extra saucy and had nice big pieces of mushrooms.

When Miguel's away I get to play! Honestly when I was living on my own I didn't cook that much. I did  a lot of Whole Foods grab and go. I loathe doing dishes and I'm a terrible mess in the kitchen. So when I found myself with a few nights to myself I did make an attempt at some dinners for one. This little sando got too tall to eat so I served it (to myself) open-faced with plenty of seasoned artichokes. 

Trader Joe's Cacio e Pepe Ravioli
Pre-made ravioli with a ton of spinach is the easiest not really cooking cooking you can accomplish. I have to say, however, that this cacio e pepe ravioli was really great! Heavy on the pepper which is just how I like it
