The week that was March 7th, 2022
This week is a distant memory now that I'm catching up on several weeks worth of dinners. But as the incomparable Celine Dion said... It's all coming back to me now! March was all over the place with birthdays, weekends away, work trips, and plenty of excuses not to sit down and get blogging. But no more! Lets take a trip down memory lane.
This week was a 50/50 of true classics and fun new flavors.
This was a great recipe if you can get past the website paywall. I always forget that when I'm looking at the NY Times cooking site to screenshot the recipes before I get blocked out! I certainly already have enough monthly subscriptions and cannot stomach another. This recipe in particular suited me because I have an affinity for cabbage. Simple and easy!
This lemony, crispy, and juicy pork schnitzel is a favorite in our home. It's from one of our favorite cookbooks and lives up to the name 'super simple'. The panko breadcrumbs are key in keeping this pork dish extra crunchy!
Two recipes this week from the same cookbook was very user friendly as it cut down my scrolling through Instagram trying to find a link from ages ago. And, it being a well used cookbook it was equally great to discover a recipe that was new to our kitchen! I'm down for a lamb dish in any form and this curry did not disappoint.
These delightful little tacos felt like a return to the classics. No messy frying, no fancy salsa or creme. Just homemade taco seasoning made to highlight all the flavors I enjoy and minimize the one I don't. Simple toppings, simple presentation. You can't go wrong with a recipe like this!
Speaking of classics you can't get much more 'back to basics' than tomato basil soup. Even the extra buttery cheesy garlic bread felt like dinners 101. This particular rendition from Spoon, Fork, Bacon had me oven roasting the roma tomatoes in advance and that slightly charred skin and extra fresh basil was just perfection.
