The week that was May 9th, 2022

It's getting warm out now and hopefully that will lead to more grilling! We've tidied up the patio and I've been hard at work in the garden. We've got a busy couple of weeks coming up so theres a lot of great dinners now to remember fondly! Plus a #1 fan favorite returns!

Here's what we enjoyed this week! 

Wow! I have a strong abhorrence to a boring salad, so when I found this recipe that required not one but two kinds of nuts, I was sold. Plus, one of those was candied pecans made from scratch! Sign me up! Everything about this salad was wonderful. Goat cheese, avocado, citrus champagne vinaigrette? What more could an herbivore want?

Super Strawberry Lemon Pancakes
I wasn't going to post these but I really cracked a flavor code. Strawberry lemonade is one of my basic white girl favorites. However, I've tried that flavor combo before in pancakes and it was always just meh. But I had a bag of freeze dried strawberries (TJ's for the win) so I put them into the food processor and pulsed them into a super fine powder. This added a Mike Tyson level punch of strawberry flavor without adding any moisture! I believe I've cracked the code.

Another week, more Baja Fish Tacos. Its a testament to how good these really are that I've made them more times now than I can remember. These were classic, straight from the SFB blog. A little fresh pico slaw and the addition of a jalapeno and lime beer to really stay on theme. Always tasty!

We had done a version of this dish before but this rendition was pretty good. I really enjoy chicken thighs but I struggle with bone-in anything. I lack the dexterity to get my knife where it needs to go. But this was good enough for me to fight through and get to enjoying the meal.

It said easy in the recipe name but even I was totally surprised by these delicious skillet enchiladas. Definitely not traditional, but it had all the things I love. Saucy and cheesy! Probably because I'm a little sauce and cheesy myself. But no matter what your personality is, I'm sure you'll love this dish!
